Sichuan Facing Heaven PDF Print E-mail

Q:  Hey Dave,

I am looking for Sichuan Facing Heaven dried chiles. Is it possible they go by another name? None of the Asian markets in my area seem to have anything that looks like the Facing Heaven variety.

A:  Hello Karen:

That variety is not available in the U.S.  Substitute piquins.

Hey Karen,
That species of chili was banned in the U.S. until 2005 because it was thought to have caused ulcers (ironically, the acid in peppers can kill the bacteria that is one of the primary causes of ulcers).
