Marinating Game Meat PDF Print E-mail
Q:  Dr. BBQ,

 

I"ve heard that lean meats such as game should be marinated in a vegetable-oil based marinade.  Is this true?  Can you suggest some other ingredients, too?  I like hot and spicy.

A:  Hi Jimmy,

 

Marinating lean meats such as game is always a good idea and oil is definitely an ingredient I would suggest. Adding fat to the meat in any way will help it. I would also add an acidic ingredient or two such as lemon juice, lime juice or vinegar.  There are many flavored vinegars so maybe one of them or a combination of a couple. Acid helps meat break down but don"t expect a miracle. You will still need to cook those tough cuts properly to get them tender. I would always add salt, pepper, onion, garlic, and some herbs. I"d add some Worcestershire sauce, minced anchovies, honey, beer, horseradish and/or mustard as well. Now as for the hot and spicy you can definitely add the peppers of your choice to the marinade but I think you"d get allot more bang for your buck by making a spicy glaze to use at the end of the cooking.  Have fun experimenting.
