When Harald and Renate Zoschke had their Suncoast Peppers, Inc. office in St. Petersburg, Florida, right next door was the "Kopper Kitchen," a great family restaurant owned by Fred Tirabassi. This method of making chile sauce differs from others using fresh green New Mexican chiles because these chiles aren't roasted and peeled first, as you must do with green chiles. Because of the high sugar content of fresh red chiles, this sauce is sweeter than most. We harvested some chiles from his garden one late summer day, made a batch of this sauce, and ate every drop as a soup! It makes a tasty enchilada sauce, too. It will keep for about a week in the refrigerator.

Because scallops cook so quickly, they’re ideal for cold weather cooking. Try to get day boat or dry-packed scallops (scallops that haven’t been treated with sodium tripolyphosphate (STP) which causes the scallops to absorb water, increasing the weight and the price of the scallop). “Enhanced” scallops won’t sear properly due to the excess liquid.
Before advances in livestock husbandry made young lamb available all year long, it was especially popular in the spring, when the lambs were born. Still, spring lamb is particularly tender and non-gamy. I'm using a rub popular in Kentucky, where they barbecue the lamb. Finally, the balsamic reduction finishes the grilling.
