Ingredient - Lamb
Typical of the Middle East, there are many variations on this dish, some with carrots instead of potatoes and some lacking tomatoes. Chopped fresh green chiles can be substituted for the cayenne if you wish.

Love the taste of lamb for Easter but don't want to go to the bother of cooking a whole leg of lamb? This recipe combines stovetop smoking with slow cooking to produce fall-off-the-bone tender meat with a very rich, flavorful sauce. Although wonderful the day it is prepared, this entrée is even better after mellowing for a day. You'll need a stovetop smoker and a slow cooker (alternatively, the lamb shanks could be braised in a 325 degree F oven for 3 to 3 1/2 hours after being smoked). Serve with roasted spring vegetables (recipe follows) and garlic mashed potatoes. Smoke and braise extra shanks for a wonderful lamb stew.

Leg of lamb is a classic holiday meal but with the availability of lamb year-round it is becoming more and more common on the dinner table. A whole lamb leg is too large for mast families so the leg is usually cut into two sections:  the lean shank half and the tenderer (but bonier) sirloin half. Lamb shoulder which is less tender and less expensive could be substituted. This recipe requires advance preparation to allow the lamb to marinate overnight.

This stew recipe includes a small amount of salted beef, another holdover from "the old days," when that was the only way to ship beef, and it is an ingredient found in almost all the recipes for this stew. The usual meat for the Stoba is kid (goat or cabrito), but we have substituted lamb. If you have a source for goat, try it because it is delicious. The annatto oil is commonly called ruku.

There are over 30 varieties of Turkish kebabs which locals call “siskebabi,” “sis kebaps,” or “kebabi. In fact, the Mongolian tribes were the ones who introduced lamb to the rest of China. It’s easy to visualize this simple barbecue being prepared by the nomads on the steppes of Xinjiang.
