Blue Corn, native to the Southwest, gives these tamales a distinctive, nutty taste. Make them smaller than an entree tamale and serve as a side dish in place of a vegetable. This recipe is taken from Just North of the Border, by Dave DeWitt and Nancy Gerlach. Prima Publishing, 1992.
Grady Spears has three restaurants and has just published his cookbook A Cowboy in the Kitchen. Here he offers an unusual quail dish, for which you can prepare the Cider Adobo in advance.
Another example of how easy chile cheese is to use is this spin on traditional grilled cheese sandwiches.
Mops are liquids containing oil and vinegar that are "mopped" onto meats during cooking. Allow the brisket to cook for about three hours then apply this mop every hour.
Brisket rubs vary from cook to cook with each having their special blend. This is a basic recipe that can be adapted by adding or eliminating ingredients.
Liberally apply this rub to brisket a few hours before putting the meat in the smoker.
No project on chili con carne would be complete with out a recipe from a guy from Texas named Bubba. This wonderful recipe requires 3 hours cooking time and a bit of Texas magic!

Grilling caramelizes the sugar and honey in the sauce, making the fruit sweeter. This is obviously a dessert, but it can be served as a side dish to barbecued ribs, poultry, or fish. Other firm fruits will work, such as peaches or pineapple, but make sure that they are slightly under ripe. It is difficult to grill ripe fruit.

This simple but tasty dish evolved from the need to preserve meat without refrigeration since chile acts as an antioxidant and prevents the meat from spoiling. It is a very common restaurant entree in New Mexico.
